6 Tbsp soy sauce
1 tsp ginger grated
1 Tbsp sesame seeds toasted
4 small skewers that have been soaked in water for an hour
1 cutting board
1 knife
1 sauce pan
1 spoon
1 bush
1 tray
1 shallow dish for marinating
1 small bowl
tongs
1 barbeque, either a charcoal barbecue or a gas barbecue

Directions:
Make the marinade
Turn on the heat. Then introduce Into a small sauce pan the sake, mirin, soy sauce, sugar and ginger. Stir and bring to a simmer. Once simmering, stir well and remove from the heat.
Place one breast on the cutting board and slice into small uniform pieces about 2 ½ cm by 1 ½ cm.

TIP:
Clean the cutting board and knife before going on to the next step.

Prepare the scallions
Take one half of the bunch and cut off the ends and slice into 2 cm chunks, discarding the bottom end. Take the other half of the bunch and repeat. If the spring onions are too big slice the bulb in half lengthways. Slice the green top leaves for garnish.

Make the kebabs
Taking a skewer alternate scallion and cubes of chicken beginning and ending with chicken. Repeat with all four skewers until all the ingredients are used.

Marinate
Arrange the kebabs in a shallow baking dish and pour the marinade over. Leave to marinate for 15-30 minutes. Turn them making sure that all the chicken is coated.

Bbq the kebabs
Place the kebabs onto the barbeque brushing with marinade. They should cook three minutes on each side. When turned brush on more marinade. Once cooked remove from the barbecue and place on a baking tray.

Serve
Place the kebabs on a small plate and sprinkle with a little toasted sesame. Garnish with the finely chopped scallion leaves. Yakitori is a fantastic snack food that is very versatile. The sauce goes well with fruit, vegetables, seafood and meat.
